Cedar-Plank Salmon
40 min · Serves 4 · 7 ingredients
Cedar keeps the fish moist and perfumes it with smoke. A whole-plank centerpiece.
INGREDIENTS
- 1 untreated cedar plank
- 4 salmon fillets, skin on (about 6 oz each)
- 2 tbsp butter, softened
- 1 lemon, half zested and half sliced
- 2 tsp coarse salt
- 1 tsp cracked black pepper
- 1 tbsp chopped dill
METHOD
- Soak the cedar plank in water for at least 1 hour, weighing it down so it stays under.
- Heat a grill to medium, about 375F.
- Pat the salmon dry. Rub with butter, then season with salt, pepper and lemon zest.
- Set the fillets on the soaked plank and lay the lemon slices over the top.
- Close the grill and cook 15 to 20 minutes, until the thickest part flakes and reads 145F (the FDA's safe minimum for fish).
- Rest 5 minutes on the plank, scatter with dill, and serve straight off the board.
