Crispy Ground Beef Tacos with Green Sauce and Mexican Rice

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  2. Add chopped yellow onion and minced garlic to the skillet with the beef. Cook until onion is softened, about 5 minutes.
  3. Stir in taco seasoning and water. Bring to a simmer and cook until the liquid has mostly evaporated and the beef is well coated, about 5-7 minutes.
  4. Heat about 1/2 inch of vegetable oil in a separate skillet over medium-high heat.
  5. Carefully place corn tortillas one at a time into the hot oil. Fry for about 15-20 seconds per side until softened and slightly crispy. Fold the tortilla in half with tongs and fry for another 30-60 seconds per side until crispy and golden brown. Remove and place on a paper towel-lined plate to drain.
  6. To assemble the tacos, fill each crispy taco shell with a generous amount of the seasoned ground beef.
  7. Top the beef with shredded lettuce, diced tomatoes, diced white onion, and chopped cilantro.
  8. Drizzle generously with green sauce.
  9. Serve immediately with a side of Mexican rice.
